Ingredients

For the Donut Dough

  • 250ml milk
  • 2 tsp instant yeast
  • 50g caster sugar
  • 80g butter, softened
  • 1 egg
  • 500g plain flour
  • 1 tsp vanilla extract
  • ½ tsp salt

For the Blueberry Filling

  • 150g fresh or frozen blueberries
  • 2 tbsp sugar
  • 1 tsp lemon juice
  • 1 tsp cornflour

For the Blueberry Glaze

  • 1 cup icing sugar
  • 2–3 tbsp blueberry puree
  • 1 tsp lemon juice
  • Extra blueberries for decoration

Method

Step 1: Prepare the Blueberry Filling

Add blueberries, sugar, lemon juice, and cornflour to the Thermomix bowl. Cook for 5 minutes at 90°C on Speed 2. Blend for 5 seconds on Speed 5 if you prefer a smoother filling. Transfer to a bowl and cool completely.

Step 2: Make the Dough

Place milk, yeast, and sugar into the Thermomix bowl. Heat for 2 minutes at 37°C on Speed 2.

Add butter, egg, flour, vanilla, and salt. Knead using the dough function for 5 minutes.

Transfer dough to a lightly floured bowl, cover, and leave in a warm place for about 1 hour or until doubled in size.

Step 3: Shape the Donuts

Roll the dough out to about 1.5cm thick. Use a donut cutter or two round cutters to cut donut shapes.

Place donuts onto lined baking trays and cover lightly. Allow to rise again for 30 minutes.

Step 4: Cook the Donuts

For Fried Donuts

Heat oil in a deep saucepan to 170°C. Fry donuts for about 1–2 minutes per side until golden brown. Drain on paper towel.

For Baked Donuts

Preheat oven to 180°C. Bake for 12–15 minutes until lightly golden.

Step 5: Make the Glaze

Mix icing sugar, blueberry puree, and lemon juice until smooth. Adjust consistency if needed by adding more icing sugar or liquid.

Dip cooled donuts into the glaze and allow excess glaze to drip off.
